[Heather's Favorite] Macaroni & Cheese

Just for YOU, to celebrate MacKid Tuolumne-Calaveras

Ingredients:

  • 3 cups uncooked elbow macaroni
  • 1/2 cup butter
  • 1/2 cup flour
  • 1 1/2 cups milk
  • 1 1/2 cups plain yogurt
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 cups (10 oz) grated cheese (a cheddar mix is best)

Directions:

  1. Preheat oven to 350*
  2. Cook macaroni. Drain and rinse, pour into 9x13 casserole dish
  3. In a saucepan melt butter and stir in flour. Gradually stir in mailk and yogurt, add salt and pepper. Cook over low heat, stirring constantly until sauce bubbles and thickens.
  4. Reserve 1 cup of cheese, toos the rest with the macaroni. Pour sauce over the macaroni and mix thoroughly. Sprinkle top with reserved cheese.
  5. Bake until bubbly, usually 30-45 minutes.
