Ingredients:
- 3 cups uncooked elbow macaroni
- 1/2 cup butter
- 1/2 cup flour
- 1 1/2 cups milk
- 1 1/2 cups plain yogurt
- 1 tsp salt
- 1/2 tsp pepper
- 2 cups (10 oz) grated cheese (a cheddar mix is best)
Directions:
- Preheat oven to 350*
- Cook macaroni. Drain and rinse, pour into 9x13 casserole dish
- In a saucepan melt butter and stir in flour. Gradually stir in mailk and yogurt, add salt and pepper. Cook over low heat, stirring constantly until sauce bubbles and thickens.
- Reserve 1 cup of cheese, toos the rest with the macaroni. Pour sauce over the macaroni and mix thoroughly. Sprinkle top with reserved cheese.
- Bake until bubbly, usually 30-45 minutes.
